TERMINAL PERFORMANCE OBJECTIVE: Given the necessary equipment, supplies, and following discussion and demonstration, prepare washes, glazes, icings, frostings, and fillings according to standard food service principles. Performance test must be completed with 100% accuracy.*

PPO(S) While preparing washes, glazes, icings, frostings, and fillings, maintain clean and sanitized work area with 100% accuracy on the daily lab evaluation.*

PPO(S) Given a workstation and demonstration on cleaning procedures, maintain a clean and sanitized work area to meet local board of health regulations.*

8.9.7.2 Assemble ingredients*

PPO(S) Students will be instructed on the importance of saving time by assembling ingredients before they start their projects. When preparing washes, glazes, icings, frostings, and fillings, assemble ingredients. Performance test must be completed with 100% accuracy.*
